Capsicum and coconut sounds a bit strange isn’t it? But trust me it’s one of those recipes I made by fluke and turned out so delicious. For this rice I used my coconut chutney which is my absolute favourite.
Try this recipe and serve it with anything or just on it’s own.
- 1.5 cup steamed (cooked) basmati rice
- 2 medium onions sliced
- 3 cloves of garlic crushed
- 2 green chillies sliced
- 1 red capsicum julienne
- 2 tbsp coconut chutney
- 1 tbsp fresh coriander chopped
- 2 tsp oil
- Salt to taste
- 1 tsp lime juice
Heat oil, add the onion and garlic, sauté for 5 minutes till it’s golden brown.
Add in the coconut chutney, green chillies and continue to sauté for another 2-3 minutes.
Add in the capsicum and mix well. Sauté for just 1 minute. Add in the rice, toss well.
Fry on a high heat for 3-5 minutes. Add in the lime juice and garnish with fresh coriander.
