Capsicum, coconut rice sounds a bit strange isn’t it?

I used to always wonder why my mum would get angry when I would demand “something new and delicious”. I never understood her exasperation until I started making tiffin for my husband early in the morning. 

Usually Shivesh is not a fussy eater but he doesn’t like Indian dishes like rice and curry everyday in his tiffin. So I like to make something quick yet delicious for him and I try to come up with new rice dishes as he prefers rice a lot.

This capsicum, coconut rice sounded rather odd in my mind, but oh it’s one of those recipes I made by fluke and turned out so delicious.
For this rice I used my  Coconut Chutney  which is my favourite chutneys.

Try this recipe and serve it with anything or just on it’s own.

Ingredients:

  • 1.5 cup steamed (cooked) basmati rice
  • 2 medium onions sliced
  • 3 cloves of garlic crushed
  • 2 green chillies sliced
  • 1 red capsicum julienne
  • 2 tbsp coconut chutney
  • 1 tbsp fresh coriander chopped
  • 2 tsp oil
  • Salt to taste
  • 1 tsp lime juice

Instructions:

Heat oil, add the onion and garlic, sauté for 5 minutes till it’s golden brown.

Add in the coconut chutney, green chillies and continue to sauté for another 2-3 minutes.

Add in the capsicum and mix well. Sauté for just 1 minute. Add in the rice, toss well.

Fry on a high heat for 3-5 minutes. Add in the lime juice and garnish with fresh coriander.

Serve hot!
