Andhra Chicken is a delectable, addictive and one of my favourite dishes to cook.

Before I get to the recipe, let’s a talk a little bit about this dish and the cuisine from this wonderful state Andhra Pradesh.

Andhra Pradesh is a state in South India and the food is delicious, spicy and packed with amazing flavours and I absolutely love to cook dishes from this region.

This chicken recipe was given to me by my friend Swati, who is originally from Andhra Pradesh and she cooks delicious food. She gave me her mum’s recipe of a chicken starter and I didn’t know what to call it but Andhra Chicken, as it is spicy, peppery and so delicious.

My husband absolutely loves this starter and I am not a fan of chicken once in a while I don’t mind a piece ;). Even though this is a spicy dish, my students in Japan used to love it and it was a big hit in all my events!

Do give this recipe a try and I am sure you will love it!

Ingredients for marination:

  • 1 kg chicken cut in bite size pieces, (preferably thigh)
  • 1/2 tbsp each ginger and garlic paste
  • 1 tbsp garam masala
  • 2 tbsp tomato ketchup
  • 2 tbsp soy sauce
  • 3 tbsp yogurt
  • Salt and chilli powder to taste

Ingredients for cooking:

  • 4-5 slit green chillies. I used few red chillies too.
  • 1/4 cup curry leaves
  • 2 tbsp oil
  • Freshly chopped coriander for garnishing

Instructions:

Marinate the chicken in above mentioned ingredients and keep it in a refrigerator minimum for 2 hours up to 6 hours.

In a wok heat oil. Add in the green chillies, red chillies and curry leaves. Fry them and take them out with a slotted spoon. Drain them on a pepper towel.

In the same oil add in the chicken. Fry the chicken for 5 minutes on a high flame, cover the and cook till the chicken is almost tender. In the last 5 minutes add in the fried curry leaves, chillies and fry the chicken till all the liquid dries out.

Garnish with fresh coriander. Serve hot as a starter!
