Date Orange Cake made with bananas and warm spices and topped with orange glaze and walnuts, doesn’t it sound just perfect!

I love baking with dates and bananas, I reckon they make a perfect baked cake or a quick bread or muffins. I bake this combination quite a lot but this time I wanted to try some different flavours and since I had too many oranges in my fridge, I decided to give this combination a go.

Some might say this is a completely whacky combination but trust me, with all those warm winter spices all the flavours worked really well!

I seldom eat sweets and this orange glaze is something delightful and addictive. If you are a sweet tooth, you can add it, however, since my dates were quite sweet next time I might skip it. The banana adds an incredible softness to this cake and gives a nice texture too!

After baking this cake, I tried it with tea and coffee and I have got to say it pairs beautifully with coffee especially with Nespresso Caramelito! If you are tea drinker, I would suggest pairing it with earl grey tea. These are my favourite brands for teas. Whittard tea Chelsey, Tea Pigs and Harney & Sons.

Date orange cake

A delicious cake made of dates, orange and banana.

Equipment

  • Oven
  • Stand mixer or hand mixer or whisk and a bowl

Ingredients

  • 200 g plain flour all-purpose flour
  • 120 g pitted dates chopped
  • 1 tsp baking soda for dates
  • 1 tsp baking powder
  • 1 riped banana mashed
  • 1 tsp orange zest
  • 15 ml cointreau or orange juice
  • 170 g unsalted butter softened
  • 75 g white sugar please add 100g if you prefer this cake on a sweeter side.
  • 50 g muscavado sugar
  • 2 eggs
  • 1/2 tsp each ginger, cinnamon and cardamom powder
  • 1/4 tsp all-spice powder
  • 1/4 tsp salt
  • 1/4 cup cream
  • 50 g chopped walnuts optional

Instructions

  • Place the pitted dates with soda in a bowl and add boiled water. Keep it for 10 minutes till the dates are nice and mushy. Transfer the bowl to the fridge to cool it dowm
  • Preheat the oven to 180C/350F. Coat the inside of the bundt tin/pan and keep it aside.
  • Mix the flour with baking powder, all the spices and salt.
  • Place butter and sugars in a standing mixer bowl and beat it with a paddle attachment till its fluffy. Add 1 egg at a time and continue to beat it till light.
  • Now add in the mashed banana, orange zest and cointreau. Mix it well.
  • Add the flour in 3 batches, and mix it combine. Do not over mix.
  • Add in the cream and mix it well.
  • Pour the batter in the coated tin. Sprinkle the walnuts on the top.
  • Bake it in the preheated oven for 40-45 minutes or till the toothpick inserted in the centre comes out clean.
  • After the cake is baked, let it cool in the pan for 10 minutes and then transfer it to wire rack.
  • If you desire then pour the orange juice and sugar glaze on the top. Serve with coffee.

For orange glaze:

  • Mix 1 cup powdered sugar in 2 tbsp orange juice. Whisk it well. Add 1/2 tsp melted butter and whisk it well. Pour the glaze on the cake before serving.
