Red Wine Braised Chicken

A lot of times I enter in the kitchen and I think of  very specific and exotic dish to cook but I end up cooking something entirely different.

A few days ago I had one of those situations, I was thinking of making  chicken chasseur and I ended up making this delicious red wine braised chicken. I have been working with 2 of my incredibly talented friends, Nilanjana and Paulami on Instagram, we are doing a healthy supper recipes collaboration and every week we aim to cook something healthy to stay fit. Hence I created this recipe with a lot healthy ingredients.

I served this braised chicken with quinoa salad and my husband really enjoyed it. You can serve it with farro, couscous or even with bread. Do give it a try and stay healthy!

Ingredients:

  • 4 chicken legs skinned and scored
  • 2 big onions finely sliced
  • 1 clove of garlic minced
  • 2 sprigs of thyme and rosemary
  • 1 cup button mushrooms sliced (optional)
  • 400 ml red wine
  • 250 ml chicken stock or water
  • 1 pinch saffron (optional)
  • Few pinches of crushed black pepper
  • Few pinches of red chilli (optional) I added it as my husband likes it spicy
  • 2 tbsp tomato puree
  • Salt to taste
  • 1 tbsp olive oil
  • 1 tsp butter

Instructions:

Sprinkle the chicken with salt and pepper and fry it in a bit of oil till it turns golden brown. Keep it aside.

In the same pan add the onion and garlic, sauté for 2 minutes and add the mushroom and sauté till golden brown. Add the herbs and red wine, reduce the wine by half. Add the tomato puree, chicken and keep stirring till the liquid is reduced.

Add in the chicken stock or water, black pepper, saffron and salt.

Cook till chicken is nicely cooked.

Add in the butter and serve hot!
