Pan-fried potatoes
Pan-fried potatoes goes really well with pasta, fish or chicken.

Equipment
Cast iron pan or a heavy bottomed pan
Ingredients

boiled potatoes
large diced

onion
sliced

cloves
garlic
chopped

or to taste green chilli
sliced

blanched almonds
chopped

or to taste crushed black pepper
salt to taste

grainy mustard

tsp
chopped oregano and parsley

tbsp
golden ghee or butter
Instructions
Heat ghee in a pan, add in the garlic sauté for a few seconds. Add in the onion and chilli, sauté till the onion is translucent.
Add in the salt, pepper and blanched almonds, sauté for 2-3 minutes till the almonds are slightly crunchy.
Now add in the potatoes and grainy mustard and continue frying for another 5 minutes. Garnish with chopped oregano and parsley.
Serve hot as a side.
