Hummus With Burnt Garlicky Mushrooms

Hummus With Burnt Garlicky Mushrooms

I know there are thousands of hummus recipes on the internet but I am still sharing my recipe. These days you can see hummus in so many different flavours in supermarkets or in cafes. I like to mix my hummus too and this time I served it burnt garlicky mushrooms and it was a fantastic combination.

Try this hummus and serve it with sourdough or a simple pita bread.

This is how you make this recipe.

  • 1 can chickpeas or 2 cups cooked chickpeas
  • ½ cup tahini
  • ½ tbsp or to taste lemon juice
  • ½ tsp cumin and sweet paprika for garnishing
  • 3 cloves of garlic
  • ¼ cup olive oil
  • Salt to taste
  • 3 ice cubes
  • 200 gm button mushrooms
  • 1 tbsp olive oil
  • 5 garlic cloves finely
  • 1 tsp crushed black pepper
  • 1 tsp chilli flakes (optional)
  • Salt to taste
  • Chives or parsley for garnishing

For hummus place the drained chickpeas, tahini and garlic in a food processor, give one or two pulses.

Add the ice cubes, start pulsing and start adding oil. Make a smooth puree, add in the lemon juice and salt.

For mushrooms, heat a pan and add oil. Add in the mushroom and garlic. Saute till mushroom brown and crispy.

Add the black pepper, chilli flakes and salt.

Place the mushrooms over hummus and garnish with chives, cumin powder and sweet paprika.

Serve it with pita bread or sourdough.
