Coriander, Mint and Peanuts Chutney

Coriander chutney is a common condiment in Indian household. Every household has their own recipe, in my home I have a few different ones. Since my younger sister has made this coriander chutney (but with peanuts or groundnuts) has definitely become my favourite.

My mum is an excellent cook and growing up she cooked some amazing dishes on everyday basis. I think me and my sisters definitely inherited her love for cooking food and creating new recipes.

In my recent trip to India, my younger sister was experimenting a lot with her cooking as she is getting married ;), believe me before this I have never seen her cooking with so much interest :D. She made this chutney for gluten free dosa and let me tell you it’s a flavour bomb! It is amazingly refreshing and full of fresh flavours with a nutty taste.

Till we were in Pune she made this coriander chutney so many times and we enjoyed it with Idlis, Dosas, Paniyarams and even with a sandwich.

Ingredients for chutney:

  • 1 1/2 cup fresh coriander roughly chopped
  • ½ cup fresh mint roughly chopped
  • 4 or to taste green chillies
  • ½ cup roasted peanuts
  • 1 capsicum roughly chopped
  • ½ tsp jaggery powder
  • 1 lime squeezed or 1 tbsp tamarind pulp
  • 1 tsp cumin seeds

For tempering:

  • 1 tsp oil
  • 1 tsp cumin seeds
  • A few curry leaves

Instructions:

Place all the ingredients for chutney in a food processor or a blender, make a coarse chutney.

For tempering:

Heat oil, add cumin seeds. Let them splutter then add the curry leaves.  Pour it over the chutney.

Enjoy with your snacks!

Tip: You can use this Coriander chutney as a sandwich spread or for your wraps. I used it for cucumber, cheese sandwich.
