Couscous can be very boring at times at least for me and my husband if it’s not properly seasoned and bland but we have couscous a lot in our meals, well I don’t as I am off gluten but I serve my husband with grilled meat once in a week. My husband isn’t a great fan of eating vegetables, specially broccolini and I absolutely love broccolini but there are a few ways I can make my husband eat it. This is definitely one of them.
If you don’t eat gluten then you can replace it to quinoa or buckwheat.
- 1 cup couscous
- 150 g broccolini
- 1 or to taste fresh red chilli
- 1 small onion finely chopped
- ½ cup finely chopped spring onions (white part)
- ½ tsp or to taste black pepper powder
- A small pinch saffron
- Salt to taste
- 1 tsp olive oil
- 1 tsp butter
Add saffron, salt and butter to the couscous and cook the couscous according to the package instructions. But the way I cook is, 1 ⅛ cup boiling water to 1 cup couscous, cover it for 10-15 minutes, then fluff it using a fork.
Steam the broccolini or the blanch them. Keep it aside.
Heat oil, add in the onions, chilli and sauté for 2-3 minute. Add in the spring onions and broccolini, salt and pepper, toss it well and sauté for 2 minutes.
Garnish with radish or whatever you fancy.
Place this over the couscous and serve warm.
