Capsicum Coriander Rice


I love creating easy and quick recipes for lunch box and this recipe is definitely one of them. It takes only 30 minutes from chopping to cooking and it has only 2 spices. I made this delicious, fragrant and easy rice with coriander and capsicum but you can certainly add some shredded chicken, egg or prawns to it.

Serves 4


  • 1 cup cooked rice
  • 1 onion medium diced
  • 1 red or yellow capsicum medium diced
  • 4 garlic cloves finely chopped
  • 4 or to taste green chillies finely chopped
  • 1/2 cup coriander finely chopped
  • 1/2 tsp cumin powder
  • 1 tsp or to taste black pepper powder
  • 1 lime zest and juice
  • 2 tsp olive oil
  • Salt to taste



Heat olive oil and add the garlic, onion and chillies together. Sauté for about 2-3 minutes till the onion is translucent and cooked slightly.

Add in the capsicum, mix it well. Add the cumin powder, black pepper powder and salt. Sauté for only 2 minutes.

Add the chopped coriander and lime zest, mix it well. Add the rice and mix everything well, adjust salt and lime juice to your taste.

Serve hot!
