I love creating simple, easy and healthy recipes for my husband. We mostly eat Indian cuisine at home but I like to turn the plates around ones in a while and cook something different for him. This grilled chicken recipe is inspired by Vietnamese Cuisine, it is refreshing, spicy and incredibly delicious. I served this grilled chicken with brown rice salad to make a complete meal.
- 4 chicken drumsticks skin removed
- ¼ cup thai basil leaves
- 3 kaffir lime leaves
- 3 fresh thai red chillies
- 3 cloves of garlic
- 1 small piece of ginger
- Salt to taste
- 1 tsp peanut oil
- ½ tbsp butter
- 1 tsp lime juice
Make a paste of basil, ginger, garlic, red chillies, lime leaves and lime juice.
Add the peanut oil and salt, mix it well.
Give some slits to the chicken and marinate the chicken in the above paste for at least 30 minutes.
Rub the butter on the chicken and grilled it in the preheated oven for 15-20 minutes.
