Mushroom Soup is one of my favourite soups! I love the deep earthy flavour of mushrooms, a little indulgence of fresh cream with piece of bread and I am sorted for my dinner.

Before we get to the recipe of this mushroom soup let me tell you how I made this incredible soup using an incredible machine, Thermomix. From the scratch to the finish this soup was made in my new gadget and the taste, the flavour and the consistency was perfect, I couldn’t fault it. But because this was made in thermomix that doesn’t mean that you can’t make it on the gas stove.

In this post I am posting how to make this soup on the gas stove using either a hand blender or a blender to blend it and you can check my Instagram for the thermomix recipe.

So this is how you make this delectable soup!

Ingredients:

  • 400g mixed brown and white mushrooms chopped
  • 10g dried porcini mushroom soaked in hot water for 30 minutes
  • 1 banana shallot or 1 red onion finely chopped
  • 1 clove of garlic finely chopped
  • 30g plain flour
  • ½ cup or 100ml fresh cream
  • 1 ltr vegetable or chicken stock
  • 45g or 3 tbsp butter
  • 1 tbsp olive oil
  • Black pepper to taste
  • ¼ tsp nutmeg powder (optional)
  • Salt to taste
  • ½ red chilli finely chopped (optional)

Instructions:

Heat butter and oil together, add in the garlic and shallots. Saute till they transparent. Add the plain flour and cook for 5 minutes on a medium low flame so the flour gets cooked properly. Add the mushrooms, chilli and saute for 5-8 minutes.

Add the stock, season the soup and simmer for 20-25 minutes. Blend the soup using blender. Put it back in the pot, add the cream. Adjust seasoning and simmer for another 5 minutes.

Garnish the soup with few pieces of sauteed mushrooms or croutons.

Serve hot!
